Halloween and Motherboards

Not much has changed since my last post... Sadly I don't have pictures to add with my post today, but I wish I did. First, the day before Halloween we had a family dinner at my sister's house that was pumpkin-themed. I wanted to make something different for it and that is what I did. I found this recipe for "pumpkin truffles" and I knew right away that is what I was going to make. The recipe says that it makes about 24 "truffles" and I thought that it wouldn't be enough because we were taking them to a family dinner. I then decided to double the recipe... BIG MISTAKE! It made roughly 100 balls! Yikes! We let them sit in the freezer over night and the next day I went to work on dipping them and I (not so quickly) went through 3 bags of white chocolate chips and only got 2/3 of the pumpkin balls dipped. I made an executive decision to dip the rest in semi-sweet chocolate and it used about a bag and a half of chocolate chips to finish them. Needless to say I was VERY happy when I was finally done. Haha. They turned out really good and we are still enjoying them to this day. =)
On Halloween Jacob didn't have to work so we stayed in our apartment and watched Ghost Hunters. I think I have fallen in love with that show. Haha. We ended up getting 2 trick-or-treaters, but sadly we didn't have any candy to pass out... Jacob felt really bad about that... And that was basically the extent of what we did on Halloween.
The week was looking good until Wednesday came around and my computer started turning off randomly. Jacob was kind enough to take it into the Help desk (while I took a test) to fix it. They ended up saying that my motherboard was going out... Not what poor college students want to hear. We then went home and found out that my warranty had recently expired for my computer and we would have to pay everything out of pocket. Thursday my brother-in-law was kind enough to look at my computer for me and we found out that it was just my fan and that it wasn't turning on. He then took it with him to work over the weekend so we could find out what kind of fan we need to order to fix it.

We found out today that my fan isn't broken! It just had something stuck in it! I am so incredibly happy to be getting my computer back--I have really missed it. =)
That's pretty much the extent of our lives as of lately. The next exciting thing to come is birthdays! Tomorrow Jacob turns 23! And Monday I turn 20! Birthdays are so much fun. =)

Seat belts, Truffles, and Watermelon

I'm currently working on my side of our story and I'm hoping to have that up very soon. I have realized I can be long-winded when telling stories and what-not. Haha. We were very blessed that Jacob was able to work each of his shifts last week--even though I didn't enjoy being home by myself all day Saturday. We finally got the seat belt fixed a week ago and now we are finally safe when driving and don't have to hit it against the center console until it jingles. Yay!
I've been kind of outgoing lately and trying out new recipes. I made a chocolate chip cookie pie (which was amazing might I add). I wish I had a picture of it, but after I pulled it out of the oven I walked out of the room and by the time I came back in Jacob had already devoured half of a piece. Haha. However, I made cookie dough truffles today and they are amazing!


 
One thing I'll suggest is after you roll the dough out, instead of putting them in the fridge--put them in the freezer (otherwise they melt in the chocolate and become a big messy goop of dough and chocolate).

Other than school, work, and baking, we don't do much else, but we love when we get chances to do other stuff. We had an opportunity this last weekend to go on a double date with Jacob's old roommate, Alex. We ended up carving watermelons and making homemade apple cider. I know Jacob would agree with me when I say that Alex is amazing. Haha. Here are a few pictures of mine and Jacob's creations. =)

No longer a Blogger virgin

So this is my first time using a blog...Liz says just type something, wish I was good at this. so we are just going to school, I am working, and we try and spend time together whenever we can. We are sad there is no new glee episodes until November. I dislike my job most days, but it pays the bills...well, some of them. We have been making good use of our ice cream maker, we have tried vanilla, raspberry, caramel, and mint chocolate chip. that's about all I've got, hope you enjoyed reading my first blog.

Here goes...

After a little deliberation, Jacob and I have decided to make a blog. Yay! We feel that if we (Liz) can keep this updated on a regular basis we can let more people know what is going on in our lives. So, here is to our first attempt at a blog. We hope you all enjoy it! =)
You might be wondering right now why we chose to name our blog, "Eternal Quesadillas." It's quite simple actually. We were first going to name it, "Jacob and Liz's Awesome Adventures" but felt like it should be something different. At the time we were eating quesadillas (that Jacob made) and viola! Jacob didn't understand it at first either, but when I explained it to him he thought it was perfect. I see it as Jacob is one tortilla and I am the other held together with a whole lot of cheese in between (we are very cheesy people if you didn't know). And there you have it.
Enough with the beginnings of this blog and it's name -- it's time to get on to bigger and better things!
Jake and I were married exactly 6 weeks ago and married life is flying by. We are both currently in school and trying to get used to the workload again. Haha. Jacob got a job working for a research call center here in Rexburg and works Monday, Tuesday, and Friday evenings along with all day Saturday. It's definitely hard having him gone so much when I'm left all alone for hours on end. Oh well, right?
I'm trying to keep myself busy by doing stuff with my friends and doing homework, but I had a lot of fun this last weekend. =) Monday was my old roommate's birthday so I spent practically all day Sunday making her cake. It turned out so good! Best. Cake. EVER! I'll post a picture later. Let's just say my friends all call it "Death By Chocolate" Cake. I have now run out of things to say. Haha.
